Osso buco: grass-fed beef
Osso buco, also known as beef shank, is a wonderful cut of meat for braising. This is slow cooking (or pressure cooking) in liquid, usually after browning the meat in a hot pan first. This kind of preparation can make a great fancy meal while also staying on budget.
The shank is the upper part of the leg, and so almost all pieces have a round bone in the middle. The meat around that bone comes from hard-working muscles, so the meat is very flavorful and longer cook times are usually necessary to bring the meat to tenderness.
